What is a gluten-free menu?

Gluten is a protein present in wheat, rye, and barley.  This protein, wheat in general has been genetically modified in order to have stronger and more efficient crops.  A number of people have a sensitivity, intolerance, or allergy to this protein, gliadin, and can manifest a wide variety of symptoms when consumed.  Not only is this part of these grains, but it can also be present in other types of foods as a secondary ingredient or from cross-contamination.

The main symptoms are usually gastrointestinal like diarrhea, constipation, gas, colics, among others.  There can be some nonspecific presentations that are also due to eating gluten.  Some people can present with neurological issues, seizures, autism, joint pain, hair loss, changes in metabolism that can lead to weight issues, thyroid problems, fatigue, among others.

At Hotel Cuna del Angel we are interested in promoting your health and well-being and we constantly look for ways to benefit you and add value to your stay.  After a two year process of research and preparing, we have accomplished our goal of having our well-known gourmet menú completely gluten-free.  A project that united the efforts of personnel, management, and owner for the preparation of all details that now bring to you a healthier menu with excellent flavor and quality.

Parallel to the gluten-free products, we have also included organic, permaculture grown vegetables as well as other hydroponic ones to enhance the healthier experience.

How can I make a substitution that will help me avoid gluten?  Eat food that is specially prepared without wheat, barley, or rye, but that may contain flour from other foods rich in nutrients.  It is possible at home.  However, maintaining excellent quality in gourmet dishes is no easy task.  You can enjoy breakfast, salad, soup, starters, fish, chicken, beef, pasta, and even desserts with peace of mind while you enhance your health.
