The magnificent view of nature and the famous Whale’s Tail from the terrace of Hotel Vista Ballena, Uvita de Osa, Costa Ballena Costa Rica, takes our breath away every single time. They recently inaugurated the new swimming pool with a great display of night lights.
Today, we came to chat with two culinary artists, Román and Pablo, father and son. Both became well-known for their fine cuisine at several famous restaurants of Costa Ballena. Recently, they started working together at the Vista Ballena Hotel, complementing each other’s cooking skills.
They are from Platanillo of Barú, and Román recalls when Pablo was only 12 years old, he put on an apron and prepared the best rice with seafood. Pablo worked for years at a vegetarian restaurant in Dominical where he prepared the best healthy recipes.
Many years ago, Román, who grew up in the field, started working as an assistant at La Parcela, where he made his way up and became the boss of the kitchen.
Many people know him from Hacienda Barú, where don Jack gave him his blessing when he left.
Pablo took several courses at the INA (National Learning Institute) and learned English. The fusion of both generations and dining experiences manifests in the beautiful presentation of the high-quality dishes they prepare.
