In the Borucan Indian language, the name Kua Kua means butterfly, a creature that evolves in a complete conversion from the cocoon to a magically winged creature. Estonian Executive Chef Jaak Toomsalu converts local and international produce into a culinary delight, making your meal an all-encompassing event. He gained his expertise through training in nine countries with Mediterranean, Nordic, European and Latin influences. Along with Chef Carlos Flores, (previously of the Marriott Los Suenos Resort), they work together to create celestial blends of spices, sauces, and flavors to make dining a celebratory occasion.
Their unique approach combines the traditional with the most modern international styles to boost the recipes! Everything is exceptionally prepared with extreme pride. In fact, the Chef has a NO SECRET policy and loves to share recipes. “People should have a place to go enjoy food, delight in the enchanting flavor and leave with information.” If you prefer appetizers, the 360 Bar, positioned toward the sunset and with poolside access, offers a special ‘360’ line of vodka. Food items include choices from Peruvian ceviche to BBQ ribs.
